1 Tbsp unsalted butter

10 ounces mushrooms, thinly sliced

2-4 boneless, skinless chicken breasts
2-4 slices prosciutto
4 slices fontina/gruyere cheese
2 Tbsp olive oil
fresh basil (optional)
Salt and pepper
1 1/2 tsp grill seasoning
[Grill seasoning]
1/4 cup kosher salt
2 Tbsp black pepper
1 1/2 tsp granulated garlic
1 1/2 tsp granulated onion
1 1/2 tsp dry oregano/Italian seasoning
1/4 tsp crushed hot red pepper (ceyene)

[for the lemon butter sauce]

12 Tbsp (1 1/2 sticks) unsalted butter
2 Tbsp Finely chopped yellow onion
2 garlic cloves, minced
1/3 cup dry white wine
3 Tbsp fresh lemon juice
kosher salt and freshly ground black pepper
