INGREDIENTS
  • ½ napa cabbage, shredded
  • 2 carrots, shredded
  • ¼ cup cilantro, chopped
  • 2 chicken breasts, grilled and sliced
  • ⅓ cup green onion, chopped
  • ⅓ cup peanuts, crushed
For the Spicy Peanut Dressing:
  • ½ cup creamy peanut butter
  • 1 tsp garlic, minced
  • 1 tsp red chili peppers, minced (add more for extra heat)
  • ½ tsp fish sauce
  • 1 tbsp olive oil
  • 2 tbsp light brown sugar
  • 2 tbsp soy sauce
  • 2 tbsp vinegar
  • juice of 1 lime
  • ¼ cup water (to thin the dressing)
